  • 1 tablespoon vegetable oil
  • 1 1/2 cups diced white onion
  • 1 bell pepper seeds and ribs removed, chopped
  • 4 cups diced potatoes
  • 16 ounces bulk sausage
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons chopped parsley optional

Instructions

  • Heat the vegetable oil in a large skillet. Sauté the onion, bell pepper, and potatoes until the potatoes are tender. Remove the vegetables from the skillet.

    A recipe with the same ingredients (except green peppers) was published about 45 years ago in Sunset magazine; It was, and is, delicious; I’ve used Hillshire Farm turkey kielbasa in it. The Sunset recipe added a few splashes of Worcestershire sauce just before adding eggs in to be scrambled with the potatoes and sausage. The Worcestershire sauce really kicks it up! A great one-skillet dish.

    This sounds really good! I don’t like onion or green pepper..cooked..(love them raw), so I think I’m going to try this with just some onion powder and then top each serving with a fried egg.

    In a large skillet add 1 tablespoon vegetable oil, diced white onion, chopped bell pepper, and diced potatoes.

    Replace first line in the instructions with the above and the recipe will be in agreement with the ingredients list.
