This melt-in-your-mouth, LOW CARB Freezer Fudge has all the deliciousness of a Reese's peanut butter cup, but none of the sugar or junk. Just 6 real-food ingredients that come together in a snap.( Keto, Low-Carb, Dairy-Free, Sugar-Free & Vegan) Jump to Recipe
Easy Dairy-Free Sugar-Free FUDGE
So incredibly rich and CREAMY. Smooth, soft and LUXURIOUS. It literally melts in your mouth.
The BEST flavor combo.. dare I say EVER?? Creamy peanut butter & chocolate... but so much healthier than conventional chocolate.
I'm in shock here... Healthy fudge? Count me in!
You don't need any dairy OR non-dairy substitutes like coconut cream. Just a few simple ingredients you may already have in your pantry.
No sugar (the number one ingredient in traditional fudge!) and no artificial sweeteners either. No erythritol or Swerve. I use a plant-based natural sweetener that has a delicious flavor and no weird aftertaste.
Made in Minutes
These scrumptious little bites take just MINUTES to put together. Less than 10 minutes from start to finish. Because sometimes you don't have hours to spend on a recipe!
Simply melt together a few ingredients --
- unsweetened chocolate
- peanut butter
- coconut oil
This is best done on your stovetop. (A microwave is not recommended for this type of chocolate since it tends to seize/harden/get funky)
I don't have a double boiler, so I just put a glass bowl on a pot of boiling water. It works great! And saves space in my kitchen.
Then pour into silicone molds or a small dish (don't forget the parchment!), and freeze.
UPDATE: I made another version of this recipe that is simpler and maybe even more delicious! See the notes below the recipe.
Customizable Deliciousness
Sweeten with one of my favorite zero-calorie, all-natural sweeteners: Sweet Leaf Vanilla Creme Stevia Drops.
It just takes a few drops to create all the sweetness you need without the carbs! Can I get ahallelujah?!
NO added sugar.I STILL can't believe it myself! You control the amount of sweetness to fit YOUR exact tastes!Customizablechocolate FTW.
Even my husband, who is NOT a big fan of stevia, LOVED these.
Keto Fudge Bites
Slice these babies into 1" squares, or make them big. However you want. It's your fudge.
I love the mini bite-size pieces. Perfect portion control. Plus they're rich, so smaller is better.
Although I did end up eating more than 1... maybe 4..ish? Hey, being a recipe developer is a tough job, lol. Somebody's gotta taste it. 😉
But when I let my hubby and kids try it, they kept coming back for seconds and thirds (ok maybe 4ths, too!). This stuff is GOOD.
This recipe makes a small batch, but feel free to double it, if you're feeding a crowd (or if you're a pb chocoholic, like me) 😉
Enjoy Straight from the Freezer
You can enjoy this FREEZER Fudge straight from the freezer for a firmer bite - like a bar of chocolate (peanut butter flavored chocolate!! YUM).
OR let it set at room temperature for a few minutes to soften ever so slightly for a fudgy -melt in your mouth- DREAMY treat.
But, hence the name "Freezer Fudge" it's gotta stay in the freezer or it will melt.

Cook Time: 5 minutes minutes
Total Time: 35 minutes minutes
Servings: 25 pieces
Author: Emily
Ingredients
US Customary - Metric
- ½ cup natural peanut butter - + 1 Tbs for swirling
- 1 ½ oz 100% cacao (unsweetened) chocolate bar - chopped, or coconut oil *see notes*
- 3 Tbs coconut oil
- 25 drops vanilla stevia - 10 monkfruit drops, or 1 Tbs powdered sweetener to taste
- 2 teaspoon vanilla
- Pinch of pink salt
Instructions
Fill a small saucepan with a few inches of water. Bring water to a boil over high heat.
Place chocolate in a glass bowl on top of the boiling water and let it set for about a minute to melt.
Lower the temp to a medium boil. Stir continuously until nearly all the chocolate is melted.
Turn the heat down very low and add the peanut butter, coconut oil, salt and stevia. Stir until completely smooth.
Remove from heat and stir in vanilla. Taste and adjust for sweetness & saltiness.
Pour into silicone molds or a 5x5 dish lined with parchment overhanging the sides (for easy removal). Swirl a few small spoonfuls of peanut butter on the top.
Freeze for 30-60 minutes until set. Slice and enjoy!
Notes
What I used:
Aldi Organic Peanut Butter
Baker's Chocolate, unsweetened
Sweet Leaf Vanilla Creme Stevia Drops
Keep Frozen and tightly wrapped. Melts if set out at room temp for too long.
For a firm bite, eat straight from the freezer. For a softer fudge texture, allow to sit at room temp for a minute.
UPDATE: You can swap the chocolate bar for coconut oil! Delish! Here is the recipe:
- ⅓ cup natural peanut butter
- ⅓ cup coconut oil, softened
- 3 Tbs raw cacao powder
- 25 drops Sweet Leaf vanilla stevia , to taste
- 1 teaspoon vanilla
- Pinch of pink salt
To make: Mix all together and spoon into silicone molds or a small dish lined with parchment. Freeze for about 30 minutes to set, then keep refrigerated (not frozen) for best texture. Enjoy!
Want to use a different sweetener?I would use the equivalent of 1 Tbs sugar, then taste and adjust. I recommend powdered coconut sugar (just blend it for 20 seconds in a blender to make powder). Swerve or other granulated sweeteners would work, too. A pinch of pure stevia powder is another easy swap for stevia drops.
Liquid sweeteners, like maple syrup/honey, may not work as well in this recipe, since they cause nut butters to seize/harden, and also freeze harder, which would not create the fudge texture you want. But it might still be great! If you try a different sweetener, please report back how it goes! 🙂

Hi, these look great! How much maple syrup do you think I could use in place of the stevia drops?
Reply
Emily
Thanks! I think maple syrup might make them too soft. But if you want to give it a try, I would start with 1 Tbs at the very end with the vanilla, and adjust to taste.
Perhaps adding one extra Tbs of coconut oil would make up for the extra liquid?
If you try it with maple, please do report back how it goes!
Coconut palm sugar would work, too. I would try 2-3 Tbs. Hope that helps!

This has been my go to sweet treat recipe years! I make it using the microwave in 30 second intervals in a glass Pyrex bowl and place in a mini muffin silicone pan to make portioning easier. I use liquid Stevia however, I do 20 drops as I found it to be too much with 25.Love this recipe! Becareful these are addicting! You'll find yourself eating the whole tray in one day!

Great idea with a muffin pan! So glad you like them 🙂 thanks so much for taking the time to leave a review!

I can’t wait to try these. Would cacao powder work or will it drastically change the texture?
Reply
Emily
It would be different than fudge, but might work if you add more coconut oil. It would be more like bark, I think. If you try it, let me know how it goes!

Hi Emily. Looks delicious! Do you by any chance know how much of the powdered Stevia rather than liquid, to use? Also, I can’t seem to get my hands on the Vanilla Creme and Amazon Canada doesn’t have it. Since I’ll be using the regular flavour, should I add in extra vanilla?
Reply
Emily
Thanks! If you're using pure stevia powder (no other ingredients), start with just a little dash. Taste and see if it needs any more. You can add an extra splash of vanilla too Let me know how it turns out

Does it have to be pink salt? Would anything else work? I’ve never used it before and am not sure about using it in other things. I hate to buy it just for this.
Reply
Emily
Regular salt will work fine. Pink is delicious though! I highly recommend trying it sometime.

Could I use unsweetened cacao powder instead?
Reply
Emily
You could try that, but it would be different texture than fudge. If you want to use cacao, I would try 3 Tbs cacao + 3 Tbs Tbs coconut oil in place of the chocolate (and taste and adjust). If you try it, let me know how it goes! 🙂

Emily
Just tried it with cacao! It's delish 🙂
1/3 cup peanut butter
3 Tbs cacao
1/3 cup coconut oil, softened
25 drops Sweet Leaf vanilla stevia , to taste
1 tsp vanilla
Pinch of pink salt
Mix all together and freeze into silicone molds or in a small dish lined with parchment.Reply

Can I use regular stevia liquid? And if so how much since it doesn’t have a dropper?
Reply
Emily
Yes, that should work. It may vary by brand but I would just start with a little (maybe 1/16 tsp or a splash) and taste & adjust. It doesn't take much at all for the stevia I use.

I put the recipe into My Fitness Pal and it says the servicing size is 1, is that one square? Or do you know how many goes into that 1 serving? Please let me know when you can:).
Reply
Emily
It makes about 25 pieces, depending on how big you slice them. I use a 5x5 dish and make 1" pieces. And I usually eat 1 or sometimes 2. Hope that helps!

Would almond butter work instead of peanut butter in this? Same amount? thank you.

Yes, that should work fine 🙂
