By omitting the added sugar, high-fructose corn syrup, seed oils and soybean oil, you can not only make the best mayo tailored to your keto or low carb diet but it will be completely healthified too!

What’s Wrong With Store-bought Mayonnaise?

Turns out, a lot. Sadly, mayo’s on the grocery-store shelves are packed with hidden sugars and hydrogenated vegetable oils that can wreak havoc on your health! Canola oil, vegetable oil, sunflower seed oil, and soybean oil are said to oxidize when they are heated, causing a negative effect on your body at a cellular level. Not to mention that they are all higher in omega 6 fatty acids which scientists believe contributes to disease. And some just aren’t environmentally friendly such as palm oil.

Sugar is another added ingredient that’s been added to store bought mayo that just isn’t necessary! But not always is it just listed as sugar! It can be hiding in labels as high fructose corn syrup, corn syrup, fructose, maltodextrin, and sucrose to name a few. Keep in mind that most sugar used in shelf products is not cane sugar, unless otherwise stated as such. Nope, the sugar that is used is made from beets! Crazy, right? To top it off, if you read the label you’ll find a majority of the time multiple of the above mentioned hidden sugars are used in just a single product! Add salt to that, and you have yourself something that is very palatable and highly addictive!

Well, good for you for taking charge of your own health! As you can see there is a lot to learn about what goes into our bodies, and a lot of it starts with reading labels and learning the “no, no’s” for good health. Thankfully there are some products that the grocery store may carry such as Primal Kitchen Mayo, that is made with good fats and that don’t have the added “natural flavors”. So What Oils Do I Use?

There are several healthy fats that can be used that will help you diversify the taste, for that perfect flavor on your pallet! The type of oil we prefer to use is an extra virgin olive oil. I feel like the flavor is very mild and it tends to pair well with every dish especially in salad dressings. I would not recommend using a light olive oil as they are highly processed. I’ve also had great luck with bacon fat. I made this as a sauce for chicken wings and it was a hit! It’s great if you are looking for that extra depth of flavor. For a more neutral oil you could try using avocado oil, MCT oil, or coconut oil to help give you a more subtle flavor. Whatever you decide, feel free to make this keto mayo recipe your own!

Tips For Successfully Making Mayonnaise

  • Make sure your eggs are at room temperature! If they are not. Place them in a bowl and submerge that bowl into a hot water bath.
  • Since mayonnaise contains raw eggs, I prefer organic eggs.
  • Place the acids in with the egg yolks before dripping in the oil.
  • Slowly adding the oil, one drip at a time, in the beginning is absolutely key for it turning out!
  • Keep the immersion blender or food processor going continuously at high speed until the mayonnaise is made. Allow for no distractions! (My favorite immersion blender found here.)

Immersion Blender

Ingredients

1 whole egg

2 egg yolks

2 teaspoons yellow mustard or Dijon mustard

1 tablespoon juice from a lemon

1 tablespoon apple cider vinegar or white vinegar

1.5 cups of extra virgin olive oil.

Salt to taste

(Optional) pepper to taste

This Is The Best Easy Keto Friendly Mayonnaise Recipe

Place one room temperature whole egg along with two egg yolks in a mason jar. Add mustard, lemon juice, apple cider vinegar and a pinch of salt. Turn the immersion blender on high speed. Blend until the mixture becomes light and frothy, about 30 seconds to 1 minute. With the immersion blender on high speed, pour olive oil in a thin stream or even 1 drop at a time until you’ve poured in ½ of the amount needed. *If you rush this process then the fat from the yolk will not take in the fat from the oil, therefore causing your mayonnaise to separate! Once about ½ of the cup of olive oil has been incorporated (your mayonnaise should be getting thicker by now, if not keep adding 1 drop at a time), you can add a bit more olive oil at one time until the remaining cup of olive oil has been blended in. Salt and pepper to taste. Add to your favorite dish!

Yield: A little less than 2 cup
