These Vegan Buffalo Cauliflower Tacos are packed full of spicy buffalo sauce, creamy ranch, crunchy romaine and hearty avocados.
Do you ever go through a phase where you just can’t get enough of a certain food?
Like, your mouth waters just thinking about it?
And you have to go to the store after work to get the ingredients just to satiate the craving?
Well that has been buffalo sauce for me over the past couple weeks.
I seriously can’t get enough.
I tried to cure my craving by making my Roasted Cauliflower Buffalo Pizza.
It almost did it for me, but I wanted to try something new too. And these tacos were justthe ticket.
Cauliflower is seasoned up with garlic and chili powder before taking a dip in some buffalo sauce.
Once those little guys are roasted to perfection they take another buffalo sauce bath to make them extra saucy and delicious.
…is your mouth watering yet?
After that, you’re pretty much done.
Load up some soft tortillas with romaine, avocado, cauliflower and ranch (and maybe a little cilantro if that’s your thing).
Then, it’s time to go to town.
You may end up like me and eat these over your kitchen sink, because that’s as far as you can get before devouring them.

Ingredients
FOR THE CAULIFLOWER
- 1/2 head cauliflower cut in bite-sized pieces
- 4 teaspoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 3/4 cup buffalo sauce separated
- pepper to taste
FOR THE TACOS
- 8 taco-sized flour tortillas
- 1 head romaine lettuce chopped
- 1 avocado pitted and diced
- vegan ranch to taste
- cilantro or green onion diced (optional)
Instructions
Preheat oven to 425 degrees and line a baking sheet with parchment paper.
In a large bowl combine cauliflower, olive oil, garlic powder, chili powder, pepper and 1/4 cup of buffalo sauce. Stir to combine. Spread evenly on baking sheet and cook for 20 minutes, flipping halfway.*
Five minutes before the cauliflower is done cooking, heat up the remaining buffalo sauce in a saucepan or in the microwave.
Remove cauliflower from the oven and place it back in the bowl. Add remaining heated buffalo sauce and stir to combine.
To assemble tacos, load each tortilla with romaine, avocado and cauliflower. Drizzle with ranch and top with cilantro or green onions.

*For crispier cauliflower, after cooking for 20 minutes, turn oven to broil and cook for an additional 2-5 minutes.

I live in Buffalo so this recipe is right up my alley. It was wonderful! I added chickpeas in with the cauliflower and baked it all together. It is so good. I think the chili powder with the hot sauce is the unique aspect to this recipe. Thank you for sharing!

I throw any wraps or taco under the broiler for 1 or 2 minutes , to also enjoy the taste of the taco/tortilla itself..Learned this from a midleEasten hole in wall place when they

This is my favorite recipe of all time! lol…something about it hits the spot. I’ve fed this to non vegans who loved it too. I love the buffalo cauliflower so much that sometimes I just make that part of this recipe and make a burrito out of it with brown rice, avocado, and some melted vegan cheese – the Pepper jack cheese by Follow Your Heart goes soooo well with the buffalo flavor.

Yes! I would just thaw the cauliflower before making this. I think 2 cups of cauliflower florets would be about right.

Made these last night and topped them with Follow Your Heart vegan ranch and they were delicious! I have made buffalo cauliflower a long while ago and it came out overcooked and mushy. This one was the perfect amount of cooked while still having that crunch you want with your veggies.. Already have plans to make them again. However next time I think I will make them into a wrap to make it easier to hold and eat.

Try mild buffalo sauce- my mom can’t do spicy stuff either but she has no trouble with the mild sauce. Just bake the cauliflower til the sauce isn’t shiny anymore, it seems to reduce the heat. If that doesn’t work, make a homemade buffalo sauce with really mild hot sauce.

I made this as written swapped carrot, celery, and scallions for the lettuce and added sliced shiitakes to the roasting pan. Lots of lime and cilantro on top at the end. Really good. Will make again and pass on to vegan/veggie-loving friends.

Kinda bummed that this recipe doesn’t include a recipe for buffalo sauce. I looked at three bottles of buffalo sauce at the store and none were vegan. Had to look up another recipe and use that instead.

Sorry you couldn’t find any buffalo sauce. My go-to is Franks (the original version – the “wing” version has butter in it) and you can get that at essentially every grocery store. It is also linked in the description so you can get it on amazon. Hope that helps for next time!

The wing version contains “butter type flavor” which the company has confirmed does not come from animal sources. So the buffalo wing sauce from Frank’s is fine! I use it all the time.

These were really yummy and so easy to make! I did use less buffalo sauce though, I put the 1/4 cup in before baking, then only about 1/8 of a cup after. i also left out the chilli powder as I don’t like anything too hot. I enjoyed these even more the next day as I reheated them in the fry pan and they browned nicely.

Hi Michelle – you definitely can. If you are reheating in a microwave they won’t have the same crunch, but will still taste good. I recommend reheating in the oven if possible. 🙂

The cauliflower was way too spicy for me! I use buffalo sauce all the time but 3/4 of a cup for just a half a head of cauliflower plus a tsp of chili powder was way to much for me. I love cauliflower, it’s so versatile and I will make these again with 1/3 cup divided.

Hi Dini – I think they are manageable, especially with the addition of vegan ranch. You can always adjust the amount of buffalo sauce you add after they come out of the oven to fit your spice level.
